Soft Rhubarb Cookies
Makes 4 DozenIngredients:
- 1 cup shortening
 - 1 1/2 cup brown sugar
 - 2 eggs
 - 1 1/2 cup flour
 - 1 teaspoon baking soda
 - 1/2 teaspoon salt
 - 3 cups chopped rhubarb
 
- Cream together the shortening and brown sugar
 - Beat in the eggs
 - Slowly add the dry ingredients
 - Fold in the rhubarb
 - Place on a cookie sheet 2" apart
 - Bake at 350 for 12 minutes or until lightly brown
