Chicken Crusted Potpie - Recipe Wednesday

Last week I made a whole chicken in the crockpot, and had some leftovers still in the fridge. I decided to use it into a chicken potpie. I like to make my own potpies because most store bought ones because I can remove the dairy.  I'm not a fan of crust so I used the chicken to create a crust over the vegetables.

Chicken Crusted Potpie


Ingredients:
  • 1 can chicken stock
  • 2 Tablespoons flour
  • 1 bag frozen mixed vegetables - thawed and drained
  • 3 cups cooked chicken
  • 1 pie crust
  • Season as you like
Directions:
Mix the can of chicken stock with the flour in a sauce pan. Cook on low to thicken.
Place the pie crust in the pan, add the mixed veggies and place the chicken on top
Pour the gravy on top
Cook at 400 for 60 minutes or until the crust is baked and the filling is hot.

I didn't drain the vegetables enough so my potpie was a little bit soupy and it needed a bit more salt and seasoning but I will try again some other time.
