Pumpkin Puree Pucks

Earlier this week, I saw a post from Heather at Queen Bee Coupons about making ones own pumpkin puree.  I like making Pumpkin Spice Latte Syrup, but it only takes 3T per recipe so a lot of the can goes to waste (and it spoils rather quickly in the fridge).  I decided to follow her directions, but instead of freezing in one cup portions, I froze in 1 Tablespoon "pucks".  Once the pucks were frozen, they all got thrown into a gallon size bag.

This was super easy to make.  Basically, you cut off the top, slice in half to scoop out all the seeds, cover in foil and bake at 350 for 90 minutes.  Once they are cooled, peel off the skin and puree.  I don't have a food processor but my Magic Bullet worked beautifully.  If you want to do it yourself, head over to Heather's blog for a wonderful picture tutorial.

I'm looking forward to using this to make some more Pumpkin Spice Syrup and maybe some sort of cookies or bread.

  3. Well that's an awesome idea! I'm debating weather or not I want to make all of my pumpkins into jack-o-lanterns or make yummy food instead! Maybe I'll have to steal one! Awesome tips! Thanks!!! :)
