Pumpkin Cookies

Its fall time and everything around is pumpkin flavored. A couple nights ago I decided to jump on the pumpkin train and make some cookies. I don't remember where I got the recipe from originally; it was written down in my recipe box.

Ingredients:
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup pumpkin (I used the puree I made a couple weeks ago)
  • 1 egg
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 3/4 cup raisins (I was all out so these were raisin free)
  • 1 cup all purpose flour
  • 3/4 cup wheat flour
  • 3/4 cup pecans (optional)
Directions:
  1. Melt butter for 30 seconds
  2. Add all ingredients except for the wheat flour, raisins and nuts
  3. Beat thoroughly
  4. Stir in wheat flour, raisins and nuts
  5. Bake at 375 degrees for 10-12 minutes
  6. Let cool then add glaze
Glaze:
  • 1/4 cup butter
  • 2 cup powdered sugar
  • 1 1/2 teaspoon vanilla extract
  • 2 Tablespoon milk
Melt butter then mix in other ingredients
