Root Beer Cookie Pie

While Brad, Ben, Milo & Kevin worked on some items on our house; Renee and I decided to make some goodies.  We opted for Root Beer Cookies; however, we were lazy and didn't want to do multiple batches, so we just put it in a round pyrex and baked them like one large cookie pie.

Here is the recipe we used:

Cookie Ingredients:
  • 1 cup softened dairy-free butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 cup rice milk
  • 1 teaspoon root beer concentrate
  • 4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Frosting Ingredients:
  • 4 cups powdered sugar
  • 1/2 cup dairy-free butter
  • 3 Tablespoon rice milk
  • 1 teaspoon root beer concentrate
Directions:
  • Cream butter & brown sugar
  • Add eggs and beat into mixture
  • Beat in milk & root beer concentrate
  • Slowly add in flour, baking soda & salt
  • Split into 2 8"-9" pans and bake at 375 for 30 minutes or until toothpick comes out clean
Here is how the final pie turned out.


The middle was a bit undercooked but it was still delicious.  We will be making these again :)
