Pineapple Canning

Last night Brad and I worked on canning 4 pineapples.  A couple weeks ago, Fred Meyer had pineapples on major sale so I sent Brad to pick some up.  My original plan was to make some Apricot-Pineapple Jam, but life got in the way and so we had 4 pineapples that needed to be processed.

This was my view for most of the evening.  I sat at the kitchen table for moral support while Brad did the actual work.

I did get one job: stirring the sugar water until all the sugar dissolved. Pip joined in the fun hoping that something would drop that he could eat.
 
Brad chopped up all the pineapples and put them in 1/2 pint jars.  We figured that these would be good sizes for single use.  We could have used pints or quarts but they would end up spending a lot of time in the fridge after opening.

In the end, 4 pineapples filled 18 jars. After it was all finished, Brad asked what else I wanted canned while we had all the stuff out.  I'm thinking of canning some pie filling this summer, but I need to figure out some good recipes.

By the end of summer I'm hoping to can some peaches, pie filling, fig jam, pickles and just about anything else that I find in the next couple months.  I'm learning that the National Center for Home Preservation is a great resource for anything canning related. Are any of you canning or preserving this summer?  What items are on your list?
