New Food Wednesday (er…Thursday)

Yesterday turned out to be a bit more eventful than I had planned so I didn’t get to post my New Food Wednesday post.  (According to the doctor I tore my Achilles)

Here is the recipe that I have for this week:

Turkey Meatballs (originally found via SparkPeople)

Ingredients:
  • 4 Tbsp flax seed meal
  • 3 Tbsp oregano (fresh or dried)
  • 3 Tbsp basil (fresh or dried)
  •  3 Tbsp parsley (fresh or dried)
  • 0.5 tsp. of sea salt, pepper &/or chili peppers to taste.

  • 1 lb extra lean ground turkey
  • 2 celery stalks, minced
  • 1/2 purple onion, minced
  • 3 Tbsp garlic, crushed

Directions:

·         Preheat oven to 400
·         Mix top 5 ingredients in a small bowl.
·         In a bigger bowl, put the remaining 4 ingredients.
·         Combine all the ingredients into the larger bowl
·         Form balls with the mixture and place on a greased cookie sheet

Makes between 25-30 meatballs depending on size.

Cook for 20-25 minutes. Eat while still hot! 


 I probably will make these again, but with less herbs, the parsley was a little overpowering.
