Here is the recipe that I have for this week:
Turkey Meatballs (originally found via
SparkPeople)
Ingredients:
- 4 Tbsp flax seed meal
- 3 Tbsp oregano (fresh or dried)
- 3 Tbsp basil (fresh or dried)
- 3 Tbsp parsley (fresh or dried)
- 0.5
tsp. of sea salt, pepper &/or chili peppers to taste.
- 1 lb extra lean ground turkey
- 2 celery stalks, minced
- 1/2 purple onion, minced
- 3 Tbsp garlic, crushed
Directions:

Preheat
oven to 400

Mix
top 5 ingredients in a small bowl.

In
a bigger bowl, put the remaining 4 ingredients.

Combine
all the ingredients into the larger bowl
·
Form
balls with the mixture and place on a greased cookie sheet
Makes between 25-30 meatballs
depending on size.
Cook for 20-25 minutes. Eat while still hot!

I probably will make these again, but with less herbs, the parsley was a little overpowering.
